Creamy Ricotta Breakfast Bowl

A LIGHT, CREAMY BREAKFAST THAT IS PERFECT FOR A SUMMER MORNING.TOP IT WITH SEASONAL FRUITS OF YOUR CHOICE.

 

INGREDIENTS 

200 g/7 oz ricotta cheese

grated rind of ½ orange

grated rind of 1 lemon

1 mango, peeled, stoned and sliced

2 blood oranges, peeled and sliced

1 passion fruit, halved, flesh only

1 tbsp gluten-free granola

1–2 tsp honey (optional)

 

1. Place the ricotta cheese in a medium-sized bowl and stir through the grated orange rind and lemon rind.

2. Divide the mixture between two smaller bowls.

3. Top with the mango slices, blood orange slices and passion fruit flesh, then sprinkle over the granola and honey, if using, and serve immediately.

 

Tip

You may want to omit the honey and sprinkle with ground cinnamon instead – this is a great way of adding flavour, and cinnamon is also is known to help control blood sugar levels.
