Molten Marshmallow Chocolate Chunk Brownies

Brownies just got even better! Chocolate and marshmallow are perfectly paired in this gorgeous gooey mess!

Makes 12

Prep: 20 mins, plus cooling Cook: 25 mins



10 g/¼ oz unsalted butter, for greasing

250 g/9 oz unsalted butter

250 g/9 oz plain chocolate

4 large eggs

350 g/12 oz caster sugar

½ tbsp vanilla extract

½ tsp salt

150 g/5½ oz plain flour

75 g/2¾ oz large chocolate buttons or chocolate chunks

75 g/2¾ oz marshmallow fluff


1. Preheat the oven to 180°C/350°F/Gas Mark 4. Grease a 22-cm/8.-inch square baking tin and line with baking paper.

2. Put the butter and chocolate into a heatproof bowl set over a saucepan of gently simmering water and heat, stirring occasionally, until melted. Remove from the heat and leave to cool slightly. Beat together the eggs, sugar, vanilla extract and salt in a bowl or jug.

3. Beat the egg mixture into the cooled chocolate mixture, then fold in the flour. Stir in half the chocolate buttons, pour into the prepared tin and bake in the preheated oven for 30 minutes.

4. Carefully remove the brownie from the oven (do not switch off the oven) and add spoonfuls of the marshmallow fluff to the top.

5. Scatter with the remaining chocolate buttons and bake for a further 10–15 minutes until the marshmallow is molten and beginning to colour. Leave to cool slightly, then cut into 12 squares and serve.
