Matcha Green Tea Cocktail Recipe

You've seen quite a few Matcha Green Tea creations lately; now it's time to try it as a cocktail.

Matcha Green Tea Cocktail

Serves 1


1 medium egg white

1/2 measure lime juice

1 tsp caster sugar

1 measure green tea and lemon grass gin

1 measure sake

1/2 measure agave syrup

1/2 measure lime juice

ice cubes

Green Tea & Lemon Grass Gin

350ml/12 fl oz gin

1 tsp matcha green tea powder

2 fresh lemon grass stalks, roughly chopped


1. The green tea and lemon grass gin takes 24 hours to infuse. To make the foam, you will need an espuma gun.

2. To make the gin, pour the gin into a medium-sized, sterilised and sealable jar. Keep the gin bottle for later use. Add the matcha green tea and lemon grass. Mix well, then seal and leave to infuse for 24 hours.

3. After 24 hours, strain the mixture through a coffee filter and pour back into the reserved gin bottle. This will keep for several months.

4. For the cocktail, lightly whisk the egg white, lime juice and sugar in a medium-sized bowl until the sugar has dissolved. Pour the egg mixture into an espuma gun and charge once.

5. Place the green tea gin, sake, agave syrup and lime juice in an ice-filled cocktail shaker. Shake vigorously until well frosted, then double-strain into an ice-filled coupe class. Shake the espuma gun and top the cocktail with the egg-white foam. Serve immediately.
