Veggie Burger Day Recipe: In A Bowl!

Celebrate Veggie Burger Day with a twist on the original: turn it into a trendy bowl recipe.

Veggie Burger Bowl

For 4 Persons

These burgers are filling and nutritious and you could eat them in a bun, but serving them in a bowl on a bed of colourful roasted ratatouille is even better – this dish is full of vitamins, minerals and fibre, all perfectly balanced to keep you fit and healthy.

Ingredients

2 red peppers, deseeded and chopped
2 yellow peppers, deseeded and chopped
2 red onions, cut into wedges
2 courgettes, thickly sliced
3 tbsp olive oil
400 g / 14 oz canned chickpeas, drained and rinsed
200 g / 7 oz frozen peas, thawed
200 g / 7 oz frozen sweetcorn, thawed
15 g / ½ oz fresh coriander
(including stalks)
¼ tsp cumin
80 g / 2¾ oz plain flour
1 tbsp sunflower seeds
1 tbsp sesame seeds

Dressing

1 avocado, peeled, stoned and chopped
200 g / 7 oz natural yogurt
2 spring onions, chopped
1 garlic clove, crushed
1 tbsp lime juice
salt

Instructions

1: Preheat the oven to 200°C/400°F/Gas Mark 6.

2: Place the red peppers, yellow peppers, onions and courgettes in a roasting tin and drizzle with 1 tablespoon of the oil. Roast for 35–40 minutes, until they are slightly charred at the edges.

3: Meanwhile, place the chickpeas, peas, sweetcorn, half the coriander, the cumin and 70 g/2¾ oz of the flour in a food processor and process to a thick paste. Add the sunflower seeds and sesame seeds, season with salt and pepper, if using, and process again to mix together.

4: Using wet hands, divide the mixture into four portions and shape each portion into a patty. Dust the patties with the remaining flour and chill in the refrigerator for 20 minutes.

5: Meanwhile to make the dressing, place the avocado, yogurt, spring onions, garlic and lime juice in a small blender and blend until smooth. Season to taste with salt and pepper, if using.
6: Heat the remaining oil in a frying pan, add the burgers and cook for 5–6 minutes on each side, until cooked through.

7: Divide the roasted ratatouille between four bowls, top each portion with a burger, then drizzle with the dressing and serve immediately.
